Make Ahead Potatoes

These taste like the filling of twice-baked potatoes. So good!

5# potatoes, mashed
6 oz. cream cheese
1 C. sour cream
2 tsp. onion powder
1 1/2 C. sharp cheddar cheese, shredded
Black pepper, to taste
Dash baking powder

Mix ingredients together, refrigerate for up to three days prior to serving.
Bake @ 350* for 1 hour.
In the last 15 minutes of baking, top with cheddar cheese.
