Although, she can't take credit on the originality of this recipe, it's a recipe from the Olive Garden restaurant. Don't tell!
Zuppa Toscana
1# Italian sausage
3/4 C. diced onion
2 medium russet potatoes, sliced thin (I leave the peels on)
2 cloves garlic, minced
2 C, coarsely chopped kale
2 T. chicken bouillon base
2 C. water (enough to cover potato slices)
2 C. whole milk
1/3 C. whipping cream
Brown sausage with onion and garlic (can add few red pepper flakes for heat), drain.
Add potato slices, chicken base, and water.
Simmer 15 minutes until potatoes are tender.
Add kale leaves, milk, and cream.
Simmer 4 minutes.
Serve with grated fresh Parmesan cheese and cracked black pepper.
