Our summer veggie garden yields some crazy-big zucchini ... so, when life hands you giant zucchini, make chocolate cake!
2 C. flour
2 C. sugar
3/4 C. unsweetened baking cocoa
2 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
1 tsp. cinnamon
4 eggs
1 1/2 C. vegetable oil
3 C. peeled and grated zucchini
Grease and flour 9 x 13 pan.
Stir flour, sugar, cocoa, baking soda and powder, salt, and cinnamon together.
Add eggs and oil, mix well.
Add zucchini.
Bake @350* for 50-60 minutes, until toothpick inserted comes out clean.
Dust top with generous portion of powdered sugar.
Cool before serving.
