Slow-Cooked Honey Pork

1 (2-3#) boneless pork roast
2/3 C. grated Parmesan cheese
1/2 C. honey
3 T. soy sauce
2 T. dried basil
2 T. minced garlic
2 T. olive oil
1/2 tsp. salt
2 T. cornstarch
1/4 C. cold water

Spray Crockpot with non-stick cooking spray, add roast.

In a small bowl, combine the cheese, honey, soy sauce, basil, garlic, oil and salt; pour over pork.

Cover and cook on low for 6-7 hours or until a meat thermometer reads 160°.
Remove meat to a serving platter; keep warm. Skim fat from cooking juices; transfer to a small saucepan. Bring liquid to a boil. Combine cornstarch and water until smooth. Gradually stir into pan. Bring to a boil; cook and stir for 2 minutes or until thickened. Slice roast; serve with gravy and brown rice.

Calico Beans

This is true comfort food! I love eating this with homemade wheat bread or rolls and lots of butter ... perfect for fall.

1 large can baked beans
1 can butter beans
1 can kidney beans
1/2 pound bacon, fried and drained
1 T. diced white onion
1 tsp. salt
1/2 C. brown sugar
1 tsp. dried mustard
2 tsp. vinegar
1/2 C. ketchup
1 pound ground beef, cooked and drained

Drain juice off butter beans and kidney beans- reserving 1/2 C. for recipe and discard rest.
Combine all other ingredients, and bake @ 350* for 1 hour, or on low in crock pot for 2 hours.

Ma's Chili

From your Grandma G.

Nothing is better for football Sundays!

1# ground beef
1 medium onion, diced
2 cloves garlic, minced
1/2 C. celery, diced
1-16oz. can tomatoes
1-16oz. can chili beans
3/4 C. tomato juice
1-4oz. can green chilies
1 T. Worcestershire sauce
2 T. paprika
1 tsp. sugar
1 tsp. salt
1/2 tsp. cumin
1 tsp. oregano, crushed
1/4 tsp. cayenne pepper
1/8 tsp. dry mustard
1/4 tsp. black pepper
Few drops Tabasco
1 C. water

In large saucepan, brown burger, onion, celery, and garlic. Drain.

Stir in remaining ingredients- cover and simmer 30 minutes.

Serve with sour cream, green onions, shredded cheddar cheese, and saltines.

(Crock pot method: use 3 1/2 qt. size or smaller, cook on low 8-10 hours. Use only 1/2 C. water.)

BBQ Meatballs

1 1/2# hamburger
1 C. milk
3/4 C. crackers, crushed
1/4 C. chopped onion

Mix together and form into small meatballs.

Sauce:
1 C. ketchup
1 C. water
3 T. vinegar
2 T. sugar

Place meatballs in crockpot, and cover with sauce.

Cook on low for 8 hours.

White Chicken Chili

From Taste of Home.

3- 15oz. cans Great Northern beans, rinsed and drained
3 C. diced cooked chicken
15oz. jar prepared Alfredo sauce
2 C. chicken broth
2- 4oz. cans green chilies
1 1/2 C. frozen gold and white corn
1 C. Monterrey Jack cheese
1 C. pepper Jack cheese
1 C. sour cream
1 small yellow onion, diced
3 cloves garlic, minced
1 T. cumin
1 1/2 tsp. white pepper
1 1/2 tsp. cayenne pepper
Fresh cilantro, for garnish

Combine all ingredients save for cilantro in crockpot.
Cook on low 3-4 hours.

Serve with salsa verde (green salsa!) and cilantro.

Honey Sesame Dump Chops

1/2 C. beer
3 T. sesame seeds
3 T. honey
2 T. Dijon mustard
1/2 tsp. black pepper
2 cloves garlic, minced
3# boneless pork chops

Combine all ingredients, and freeze in tight container or Ziploc bag.

Dump into crock pot and cook on low for 6 hours.

Serve with hot, cooked brown rice.

Beef Stew

From Grandma S.
You know your Grandpa T. doesn't care for many vegetables, so this stew has been modified to suit his tastes! I like to add green peas, white onion, and celery!

1 1/2# beef stew meat
5 carrots, peeled
7 potatoes
3 T. beef stock
Onion powder, to taste
Black pepper, to taste

Season meat with onion and pepper, cover with water. Bake stew meat in oven @ 350* for 30 minutes.
Remove meat from drippings, set aside.
Dice carrots and potatoes, bring to a boil. Cook for 20 minutes.
Drain vegetables, set aside.

Add 1/4 C. to 1/2 C. flour to vegetable water to make it thick, stirring with a fork.
Pour into meat drippings slowly, to make thick.
Add 3 T. beef stock, until desired flavor reached.
Season with onion powder and black pepper.
Add in meat and vegetables, transfer to large crockpot and cook on HIGH for 6 hours.

Serve with buttered white bread or rolls!

Pizza Burgers

An easy crock pot food.

1 1/2 # hamburger
1/4 C. diced onion
1/2 tsp. garlic powder
8 oz. tomato sauce
1/4 C. sharp cheddar cheese, shredded
1/4 C. Colby cheese, shredded
1/2 C. Velveeta, cubed
1/2 C. mozzarella cheese, shredded

Brown hamburger with onion, garlic powder, and salt and pepper to taste. Drain.
Add to skillet the rest of the ingredients except for mozzarella, cook until bubbly.
Serve mixture over buns, and top with mozzarella.

For crockpot, add cooked mixture and keep on low/warm until serving.

Sweet 'n' Sour Chicken

1-16oz. can chunk pineapple in juice
1 green pepper, cut into strips
1# fresh carrots and pea pods
1 onion cut into wedges
6 chicken breasts
1/2 C. brown sugar
3 T. chicken bullion granules
1/2 tsp. salt
1/3 C. soy sauce
1/2 tsp. ground ginger
1/2 tsp. garlic powder
1 tsp. cornstarch
1/4 C. cold water

Place all veggies in bottom of crock pot. Place chicken on top.
Drain pineapple saving juice. Layer pineapple on top of chicken.

Mix pineapple juice with brown sugar, bullion, salt, soy sauce, ginger, and garlic powder.
Pour sauce mixture over chicken.

Cook on low for 8 hours.
Mix cold water with cornstarch and add to liquid in pot and cook for additional 30 minutes to thicken sauce.

Serve with hot cooked brown rice.

Hot Reuben Dip

Made with your great-grandma S.'s homemade 'kraut ... wow!

16oz. sauerkraut, drained
1/2# corned beef
1 C. mayonnaise
1 1/2 C. sour cream
2/3 C. 1,000 Island Dressing
1 1/2 C. shredded Swiss cheese

Combine all in crock pot.
Set on low until melted together.

Serve with rye cocktail bread.

Daddy's Taco Dip

Perfect for football on Sunday afternoons.

2# hamburger, browned & drained
1# Velveeta, cubed
1 package chipotle-style taco seasoning
1 package taco seasoning
1-8oz. bottle of taco sauce, medium flavor

Add all ingredients to crock pot. Cook on low until cheese is melted.
Serve with Scoops and Doritos.

Turkey Melt

One of my favorite food she prepares. We had this at your 1st birthday party, and I make it for Daddy's March Madness party every spring!

6 C. cooked turkey (or chicken), shredded
1/2 C. Miracle Whip (absolutely not mayo)
2/3 C. onion, finely diced
1 can cream of chicken soup
2 C. shredded cheddar cheese

Combine all ingredients in crock pot on low. Cook until melted!
Serve on dollar buns.

Waikiki Meatballs

1.5# burger
2/3 C. cracker crumbs
1/3 C. diced onion
1 egg
1/2 tsp. salt
1/4 tsp. ground ginger
1/4 C. milk
2 T. cornstarch
1/2 C. packed brown sugar
13oz. can pineapple tidbits, reserve juice
1 T. soy sauce
1/3 C. chopped green pepper
1/3 C. white vinegar

Mix burger, crumbs, onion, egg, salt, ginger, and milk in bowl. Shape into balls. Brown in oven @ 350* for 5 minutes.

Mix cornstarch and sugar. Stir in pineapple juice, vinegar, and soy sauce until smooth. Pour into saucepan, cooking on medium until mixture boils.

Add meatballs, pineapple, green pepper, and sauce mixture and combine in crock pot to warm through on low.

Buffalo Chicken Dip

This recipe knocked my socks off ... as buffalo wings are my favorite food of all time!

15oz. can Hormel chicken, drained
1 1/2 C. chopped celery
8oz. bottle Kraft bleu cheese dressing
8oz. cream cheese
6oz. bottle Frank's Hot Sauce
1 1/2 C. shredded cheddar cheese

Combine all ingredients in crock pot.
Cook on high for 2 hours.
Serve with tortilla chips or Frito's Scoops.

Crock Pot Taco Soup

You ladled this up like crazy on a cold Saturday last week!

Combine in crockpot:
1# burger-browned and well drained
1 pkg taco seasoning
1 pkg Hidden Valley ranch dressing mix
2-(14.5 oz) cans petite diced tomatoes (throw in blender on pulse for a few seconds)
1 can corn-drained
2 cans diced green chilies
1 can pinto beans-drained
1 can black beans-drained
1/2 C. water

Cook on low for 8 hours.

Garnish with shredded Colby Jack cheese, sour cream, black olives, sliced avocado, and green onions.
(Daddy eats it heaped onto tortilla chips)
